Problem with avatars - hmm - where do I begin? I find some pictures & save them to my computer. Then when I go the the shrink pictures site & try to choose 1 of the pictures, it just won't do it. Obviously I'm doing something wrong!! No time to work on them again until next week. How do I get your email? Kathy from FL (tennis avatars) has mine, if you have hers. We'll look into it next week. Thank you for your offer of help! (It sounds like Linda from MN will be looking for help next week and Ruby from SC. You're going to be busy!

Hey MizTricia, thank you for visiting my (STILL) empty page!! Am working on that! I will not leave you anything ready made - but I'll leave you the recipe for our SA Waatlemoen Konfyt or Watermelon rind preserve!
Remove outer green skin and any soft pink flesh from the watermelon. Prick each piece well on both sides with a fork. Cut into pieces and weigh. Leave overnight in a lime solution (25ml) slaked lime to 3,4 litres water. Drain, rinse well in cold water and leave in fresh cold water for 2 hours. Drain again. Place the pieces, one by one, into boiling water so that the water does not stop boiling. Cook rapidly for 10 minutes until the rind is clear. Make a syrup using 500 g of sugar for every 500 gr of rind and 750 ml water for every 500 gram of sugar. Use additional 500 gr sugar for every 1.5 kg of rind to ensure that the syrup is sufficient. Bring the syrup to the boil and add the watermelon pieces gradually. Add 12.5 ml lemon juice, 3 slices of lemon and a few pieces of bruised ginger. Cook rapidly until the peices are clear and transparent. Remove the ginger and lemon slices. Bottle and seal. I hope that you will try it one day and let me know. It is very sweet and is delicious with any blue cheese and fresh bread or savoury biscuits!

I live in Indian River County on the east coast. I was born in Daytona and have lived in Florida all my life. Have not been to alabama lately but the times I have been I remember the wonderful people and their hospitality. Indian River is where all of the hurricanes came in 2004.

I had in fact spoken to Gath about setting up this page, months ago, and have been in the process of organising it. Only today did I get the go ahead from Gath, so I will set it up in the next couple of days. Once its up and running I look forward to you adding your instructions etc., and hope you may be able to help answer others questions also.
