Becky looks like you are pretty busy too. My Shepherd's pie is very similar to what Rolanda said except I use left over roast meat,minced of chopped lamb,beef or pork, make a thick gravy put in herbs, diced onions,carrots, celery, corn and capsicum,(frozen mixed veg will do) top with mashed spuds or mixture of spuds and turnip, fork over to make rough and spread a smidgen of butter over it, bake in oven for half an hour.

Lynda, both of yours sounds close to my mom's. I seem to remember peas, green beans, corn, onion, carrots in hers. I haven't made it in a long time. Since it's just us 2, we'd be eating it for at least 3 meals.

the meat sauce does freeze well Becky.. all you would have to do is defrost, and add the potato topping.. and wha la dinner is served !!

Becky I make small individual pies and freeze ones I don't need. There are only two of us as well, quite often when I make a meal I make enough to freeze a couple of meals, all I do then is add fresh vegetables.

I'm leaving already. I start tutoring in a few minutes and won't finish until 7 tonight. A long night as I had to rearrange stuff to take d2 to the doctor yesterday. Sounded good at the time, but really sounds dreadful now!
