Thanks to June and Rolanda, I had the bat joke twice also hehe. Rolanda asked me about it before I checked my mail and sent to me, THEN I discovered June has sent it also! That is one I had to forward to my sister. she is the BAT LADY, and has a bat website, I am sure she will enjoy that hehehe.

Microwave jam sounds easy no stir way to do it. I have no idea how much a kilo of fruit might be hehe, I put in 8 cups of fruit and 8 cups of sugar, and after cooking, that makes 5 pints of jam, and about a half pint over.

I do an easy apple or peach butter, in the crock pot! it cooks for hours and hours and hours and makes the house smell loverly, and I do not have to stir! I have a really large crock pot, bought just for that. I make the apple butter because any I can find to purchase has high fructose corn syrup, and that is not something hubby needs in his diet. The peach butter is a treat, only made when I can find large quantities of peaches cheap, it takea LOT of peaches!



The no water bath method of putting up jams was something i discovered when I started doing jams and jellies back about 10 or 12 years ago. It is so much easier and never had a problem with any not sealing or going bad in storage.

The lemon butter is just lemon juice, sugar, eggs and butter, heated gently till it sets. Some call it lemon curd.
1 kilo is about 2 pound. As always just equal amounts fruit and sugar but if doing in the microwave it has to be done in small quanties.

Wrapped and labelled all my cooking and finally washed all the pots and pans (my old aluminium cake tins cannot go in the dishwasher) so time I headed for bed.

June there is nothing more tasty than home made lemon curd. It is so simple to make, but I rarely make it which is a shame.

June, glad your son is enjoying Paris. That must be the #1 tourist destination. Too bad about his luggage. That's why I had the girls pack two complete outfits in their carryon backpacks (including shoes), just in case their baggage was delayed.

I heard from Meghan by email yesterday and I spoke to Bryana this morning. Meghan started her classes yesterday. I think the first day was just a placement exam to see what level of arabic she is. She is doing good. She met a student from Cambridge on the plane from London that is going to the same school. They have been hanging out together and helping each other out. The apartment is very nice and her roommate is nice, but the roommate hates Cairo which puts a damper on things. Bryana is doing good but having a hard time with the food. She has a week and a half of school left and then they will be sight seeing.

Well, I should get going. I have to return Max's school books today, in about 45 minutes. (and I haven't taken a shower yet) We get them on loan from the public school. Of course, he lost one of them. I'm hoping someone else will find it and turn it in, otherwise we have to pay $60 for it. (Actually, Max will have to pay!)

Stella, it took me a year to get used to the food when I moved to the States. I was desperate for something familiar. By the end of the year I wondered what the fuss was all about, though I did have cravings occasionally.
